Simple Veggie Sammie

Sometimes the simplest meals are the tastiest.  This easy veggie sandwich is perfect for lunch or a lite dinner.  Below are some suggested ingredients to help you build your perfect sammie!

  • Green onions – cut 1 inch slices on angle
  • Kalamata olives halved or sliced
  • Cucumbers sliced
  • Sundried tomatoes sliced
  • Avocado wedges
  • Bread/wrap
  • Coconut butter
  • Sea salt/pepper

I like to toast my bread before building my sandwich.  Spread a small amount of coconut butter on each slice of bread.  Scoop out avocado and mash on each slice.  Begin arranging your other ingredients.  Sometimes my creation becomes an open face sandwich  because I have too many ingredients!
