Easy Pad Thai

I’ve been craving Pad Thai.  Here’s a quick recipe that is sure to please!!

 

1 package rice noodles
1-2 T coconut oil
1 red onion – diced
4-6cloves garlic – minced
1 t ginger root – minced
1 zucchini – diced
1 carrot – julienned
Cilantro leaves for garnish
Sesame seeds for garnish

Sauce
2 T liquid or coconut aminos
3 T lime juice
2 T almond butter
1 T sriracha
3 T coconut sugar
2 green onions sliced thin

Cook noodles as directed. Combine and whisk sauce ingredients.  Sauté onions, garlic and ginger in coconut oil.  Add zucchini and carrots, sautéing for a few minutes.  Add sauce to vegetable and heat thru.  Pour sauce and veggies over noodles.  Garnish with fresh cilantro,sesame seeds and a slice of lime.  You can easily substitute and use different vegetables….broccoli, squash, bell peppers.
