Gluten Free Pancakes

Who doesn’t love pancakes, especially on a Saturday morning! This is a simple gluten free recipe with rice, oat and almond flour. The berry of choice this time was lingonberries.  If you haven’t heard of lingonberries, check out Northwest Wild Foods.  They have an amazing assortment of products.

1 c brown rice flour
1/2 c white rice flour
1/2 c oat flour
1/2 c almond flour
2 T flax meal
1 T coconut sugar
1 t baking soda
1 t baking powder
1 t sea salt
1/2 t xanthum gum
1/4 c apple sauce
1 t vanilla
water
fresh/frozen berries

Combine all ingredients except berries. I add a bit of water at a time until I get the desired consistency. Once my batter is mixed, fold in berries.  A dab of coconut oil and maple syrup.

Yum!!
