Here’s a quick and easy way to cook spaghetti squash without roasting. Pierce the whole squash with a knife. Place in microwave and cook for 5 minutes. Turn squash over and cook for 2 minutes at a time. Turn squash over 1/4 each time. Don’t cook your squash for more than a few minutes at a time, or your squash will burst. (Trust me….I’ve done this and it’s no fun cleaning up!). Your squash is ready when it is tender to the touch. Remove from microwave and slice in half, using a fork to discard seeds and pulp. Use your fork to separate strands from the skin and place in serving bowl or plates. Or, serve your squash with desired toppings in the shell.
