Chickpea Cassoulet is the perfect dish on these chilly fall days.
2 sweet potatoes diced
1 onion diced
3-4 cloves garlic minced
2 c chickpeas (rinsed/drained)
1 bunch kale (or other leafy green) chopped
Sea salt and pepper
Roast sweet potatoes, onion and garlic with 1-2 T olive oil, sea salt and pepper @400 for 30-40 minutes. Stir in chickpeas and kale. Add additional olive oil, sea salt and pepper as needed. Reheat and serve.
