Smashed Potatoes

Smashed potatoes. So easy and SO tasty!
I rubbed baby potatoes with olive oil and roasted @ 400 for 30-40 minutes, turning half way.  Potatoes are done when you can pierce with a knife.  I smashed with a potato masher (you can also use a glass or mug).  Top with a drizzle of olive oil, a bit of fresh minced garlic, sea salt and pepper, or any favorite seasonings.  Broil for a minute or so.  I love serving these potatoes with a light salad.  They make the perfect side dish or appetizer as well.
