Granola. So satisfying for breakfast, as a snack or even dessert!
3 c rolled oats (not instant)
1/2 c pumpkin seeds
1/2 c hemp seeds (you can use flax or chia)
1/2 c chopped pecans (or almonds, cashews)
1/2 c coconut flakes
1 T cinnamon
1 t sea salt
1/4 c coconut oil (melted)
1/3 c maple syrup, agave or honey
Preheat oven to 300.
Combine oats, pumpkin seeds, hemp seeds, nuts, cinnamon and sea salt in large bowl. Mix melted coconut oil and your sweetener in separate measuring cup. Pour oil/sweetener over oat mixture and stir until thoroughly coated. Spread on to cookie sheets and bake for about 45 minutes. Stir granola every 15 minutes so that it doesn’t burn. After 30 minutes, add your shredded coconut and bake for last 10-15 minutes. (You could add your coconut in the beginning, but it seems to brown a bit quicker than the rest.). Let cool completely before placing in jar.
You can add any dried fruit to your granola after baking. Raisins, dried berries or banana chips. Cacao nibs or mini chocolate chips are a great addition. Whether you eat granola as a breakfast cereal or as a topping with ice cream, it’s sure to please!!
