Quinoa Salad

Quinoa salad is perfect for those days that you just don’t feel like cooking a big meal. Here’s a quick and easy recipe that can be made ahead. It’s perfect for Sunday brunch, BBQ, side dish at a potluck or just by itself.

Quinoa Salad
2 c uncooked quinoa
1 bunch green onions thinly sliced
1/2 orange bell pepper chopped
1/2 c sun dried tomatoes chopped
1/2 c black olives chopped
1 c edamame
1/2 c cucumber chopped
1/2 c pomegranate seeds
2-3 T fresh mint chopped
2-3 T fresh cilantro chopped
2-3 T fresh parsley chopped

1/4 c olive oil
1/4 c apple cider vinegar
1/4 c white wine vinegar
1/4 t garlic powder
1/2 t sea salt
1/4 t pepper

Cook quinoa according to directions and let cool. Mix dressing ingredients. Combine the remaining ingredients in a large bowl and toss with dressing. Add quinoa and stir until all ingredients are mixed. Add a touch more olive oil or vinegar depending on your preference. I think quinoa salad is better if it doesn’t have too much dressing. It tends to soak up too much of the liquid and get soggy. If you can’t find pomegranate seeds you can always substitute chopped dried cranberries or cherries.
