It’s asparagus season! Check out this delicious shaved asparagus salad. So light and refreshing!
2 bunches asparagus (make sure you buy thick stalks for easier shaving)
2 c edamame
1/4 c sliced almonds
1/4 c fresh mint chiffonaded
2 cloves garlic minced
3 T olive oil
2 T lemon juice
Sea salt and pepper to taste
Break or cut the ends of the asparagus off and discard. Use a vegetable peeler and shave the stalks, saving the top of the asparagus. You may need to slice the tips in half if they are too large. Combine the shaved asparagus, edamame, mint and almonds in a large bowl. Mix dressing ingredients and toss.
Serve by itself or as a side. It’s a great addition to my Quinoa Salad
