Refreshing Farro Salad

2 c uncooked farro
2-3 green onions sliced thin
8 oz fresh or frozen corn
10 oz snap peas
1 pint blueberries
1/3 c almond slices



3-4 T olive oil
3-4 T rice vinegar
1/2 bunch fresh basil
1/2 bunch fresh mint


Cook farro according to directions and let cool. Combine corn, snap peas, green onions, blueberries and almonds in large bowl. Fold in farro. Blend dressing ingredients and pour over farro mixture.  Stir to incorporate. Add sea salt and pepper to taste.  To make this salad heartier, add some crispy Baked Tofu
